Stephanie Says… Valentine’s Day!

Happy early Valentine’s Day everyone! Nothing says I love you more than a home cooked meal. I personally feel with a home cooked meal you can taste the love in it. That’s why home cooked meals are so yummy! I found two great recipes on Pinterest that are perfect for Valentine’s Day and that won’t stretch out your waist! They sound delish and cannot wait to try them! Have a nice romantic setting with some candles, wine and soft music in the background I’m sure it will be a Valentine’s Day you won’t forget!  My boyfriend and I are not really into the whole Valentine’s Day thing but this year we are!  July will mark six years we have been together and this will be our first Valentine’s Day!  Each year somthing came up; he was still living out of state or I had to go on travel.  Finally! we get to spend it with each other!


Creamy Tomato Crab Pasta Sauce




  • 1 pound dried gluten-free pasta, cooked al dente

Breadcrumb Topping

  • 2 slices gluten-free whole grain bread, processed into fine crumbs
  • 2 cloves garlic
  • 1 tablespoon extra-virgin olive oil
  • salt and pepper, to taste

Crab Pasta Sauce

  • 2 tablespoons extra virgin olive oil
  • 6 cloves garlic, minced
  • 1 pound lump or jumbo fresh crab meat
  • ½ teaspoon red pepper flakes
  • 5 large tomatoes, chopped
  • ¼ cup Citron vodka
  • ⅓ cup non-fat Greek yogurt
  • 1 egg
  • salt and pepper, to taste
  • 2 scallions, minced


Breadcrumb Topping

  1. Place breadcrumbs, oil, and garlic in saute pan and toss well. Season with salt and pepper. Cook over medium-low heat until browned and crunchy. Set aside.

Crab Pasta Sauce

  1. Heat 1 tablespoon olive oil in a large saute pan; add garlic and saute until lightly browned. Remove half of the garlic from the pan and set aside. Add crab meat to pan and toss gently. Remove to a bowl and set aside.
  2. Return reserved garlic to pan and add 1 tablespoon olive oil and red pepper flakes; heat. Add tomatoes and cook until they break down, about 10 minutes. Add vodka and cook 3-4 minutes for flavor to get absorbed. Whisk together yogurt and egg in a small bowl; slowly whisk into tomatoes; heat through. Transfer to a blender and blend until smooth. Return pureed sauce to pan; season with salt and pepper. Add sauteed crab meat and heat through.
  3. Cook pasta, reserving one cup of pasta water.
  4. To serve, toss cooked pasta with Crab Pasta Sauce, adding some pasta water as needed to loosen up pasta. Sprinkle with scallions and Breadcrumb Topping just before serving.



Dessert Time!!

Heart Healthy Dark Chocolate Almond Cranberry Trail Mix



  • 1 cup raw almonds
  • 2 cups air popped corn
  • ½ cup dried cranberries
  • 1 cup whole grain cereal (I used Puffin Cinnamon Cereal)
  • 50 grams dark chocolate (I used ½ of a 3.5 ounce bar of 85% cocoa extra dark chocolate)



Roast Almonds

  1. Spread almonds on an ungreased baking pan. Place in 350ºF oven and bake 7-9 or until golden brown and fragrant, stirring once or twice during baking time to ensure even browning. Almonds will continue to roast slightly after removing from oven.

Trail Mix

  1. Break chocolate into pieces and place in a small microwavable bowl. Heat for one minute. Stir and heat another minute. If chocolate is still not melted, heat another minute.
  2. In a large bowl, toss together roasted almonds, popped corn, cranberries and cereal. Drizzle melted chocolate on top. Let cool until chocolate hardens.

Notes: One serving has 232 calories, 10 grams fat, 1.9 grams saturated fat, 0 mg cholesterol, 25.7 mg sodium, 5.9 grams fiber, 2.1 grams sugar, 4.2 grams protein.
